Only on exceptional years when the Hunter Valley has warm and dry summer conditions will we attempt to make our iconic and most awarded wine. ‘The Ghillie’ is a Gaelic term for a special group of people in the Highlands of Scotland who hold responsibility for fly fishing, hunting and leisure pursuits in the lochs, rivers and mountains. This medium to full bodied 100% Hunter Valley Shiraz is produced from mature vines in the Pokolbin region and hand made at our Capercaillie winery.

The Ghillie Shiraz
Only on exceptional years when the Hunter Valley has warm and dry summer conditions will we
attempt to make our iconic and most awarded wine. ‘The Ghillie’ is a Gaelic term for a special group
of people in the Highlands of Scotland who hold responsibility for fly fishing, hunting and leisure
pursuits in the lochs, rivers and mountains. This medium to full bodied 100% Hunter Valley Shiraz is
produced from mature vines in the Pokolbin region and hand made at our Capercaillie winery. These
low yielding vines were hand-picked late February and completed fermentation in 100% French oak
casks for 14 months. A very complex nose with flavours of mocha, coffee, white pepper, blackberry,
toffee apple and rich red cherry are complimented with very juicy acidity and firm yet fine tannins
that linger.
