Fruit for this wine was harvested at Capercaillie in the second week of February 2016 and fermented in a traditional open red fermenter. A cool 7 day ferment with constant 'rack splash' pump-over's created a deeply coloured wine showing ripe plum, red berries and spice aroma. This base wine then underwent a secondary 'Chamat' fermentation before bottling. This method has produced a wine with lively purple mousse and a lifted bouquet. The primary fruit flavours are also evident on the palate and are supported by the wines natural acidity and a moderate amount of sweetness derived from the dosage liqueur.
