2015 Capercaillie Merlot
A vibrant wine with lifted plums, violets and subtle oak characters, which are evident on the palate and supported by fruit sweetness and fine tannins.
Fruit for this wine is harvested in the last week of February and sourced from the Pokolbin area in the Hunter Valley. Fermentation took place over ten days and occurred in a single open stainless steel fermenter, during which time the ferment was routinely 'splashed' to concentrate natural grape flavours and augment tannin extraction. The wine then received 16 months maturation in oak, 25% of which were new Hungarian hogshead and the balance older French hogsheads. This has resulted in a vibrant wine with medium deep colour with lifted plums, violets and subtle oak characters. These characters are evident on the palate and are supported by fruit sweetness and fine tannins.
